In addition to sunlight the suspended structure allows the wind to pass, and far from the ground the grains are less likely to ferment which would compromise the quality of the drink. All our Coffee  Cherry leaves the wash and goes straight to the suspended beds. The advantage is that in the absence of the sun, drying remains until it appears again. During the night, there is no change of humidity with the floor, since the coffee is suspended at 80 cm, nor fermentation since it fans underneath all the time.
