At Farm São Gabriel, experienced workers handpick the premium high grown arabica coffee cherries, depulp and soaked them in crystal mountain water, following a process as antique as the farm. After that, the selected beans are spread on open-air terraces to be dried by the sun. The next step is to sort the dried coffee beans into a number of different grades according to their quality.
